First Test! White Chicken Enchiladas

So I know it's not Tuesday, so it's not "Tasty Tuesday" but I had the idea to make these yesterday and didn't have the ingredients. So deal.

Tonight I tried White Chicken Enchiladas. I have never eaten enchiladas, let alone made them! I'm pretty picky but am working on broadening my palette! Here's how this went down.

Tunes: Check and very important to make cooking enjoyable. Yes, I jammed to "Call Me Maybe". No, I'm not tired of that song. I love it, don't judge me.

So I have a habit of quick 'reading' the instructions, thinking I understand and at some point in the process realize I messed up. First mistake was here, MUST HAZ ALL THE CHEEZE! Balls. I was only supposed to use 1 Cup cheese at this point. Off to a fabulous start...

That's okay, I'm frikken smart so I quick fixed it, thankfully I hadn't mixed it yet! Phew. Had you worried there, yes? Sorry, think of it as a blog cliff hanger.

My worries when doing projects like this is that I'll be really optimistic at the start and fill each one to what I feel is perfection. Then I get to the last few tortillas/noodles/whatever it is I'm filling and realize I'm out of the goods. I'll figure it out.

Balls. Well, I called it. I decided that since I was so near the end, I'd spread out what was already in the pan and just skip the last two and use them for something else. It's all good. I can be spontaneous... occasionally... rarely....

While rereading the next steps, I had a moment of immaturity when I thought the original recipe poster typed "cock". I grabbed the camera thinking it would be great for the blog when I realized my eyes are 60 and my mind is 12. Oh well, carry on.

Okay, whenever I have to cook something and be extra careful of burning I get all stressed out. This is where I start sweating and rereading the directions, preferably out loud to myself, to make sure I have it all down on what I need to do. Then I measure out the ingredients and put in order of use. The directions say to not curdle the sour cream and dammit, I WILL NOT CURDLE! So much pressure. EEK

I read that I am to let it cook for 22 minutes and broil for 3 minutes, I'm wondering how the heck I will broil it without a broiler. (That's a lot of uses of the word broil for one sentence. Broil whore.) Then I look on my stove and never realized I had a broil button! SCORE! I tend to only pay attention to what I use on a regular basis. Broil.

As it's cooking I plan to bathe my sexy self, then get distracted by the internet and then realize I have exactly 10 minutes to shower. Mission Accepted. I was out with time to spare to get these on broil (using my 'new' nifty broil button). This is the finished product. A few pieces got slightly burnt but it's all good, I like crispy.

Whenever I eat new recipes, I do a Joey Tribbiani in my head. "Cheese? Good. Chicken? Good."
Nom Rating: 4 out of 5 Noms! It's good, easy and I'll probably make it again. Just seemed to be missing a little something. I don't know what, but maybe I'll have an epiphany later. The real test is the Leftover Rating. As a spinster, I have to find good things to cook that will also be good as leftovers as I usually am eating it for the next few days. That test will be tomorrow...

  1. Try using some taco seasoning and onion when cooking the chicken :)

    1. Good idea! I'll have to try that next time, the taco seasoning. I do not like onions...not one bit. :)

  2. I like to put salsa and some lettuce on top of my enchiladas! Seems to help with the "missing" factor.
